Coconut Rice Pudding

Ingredients
Makes about 2 cups
½ cup arborio rice
½ x 400ml can of coconut milk
1 ½ cups milk (or milk alternative)
1 tsp vanilla extract (optional)
2 tbsp fruit puree
Method
1. Place rice, coconut milk, milk and vanilla in a saucepan over low-medium heat
2. Simmer gently, stirring occasionally, for 15-20 minutes or until rice is soft and liquid absorbed (be careful that it doesn't catch on the bottom of the pan)
3. Stir through fruit puree. Blend if required
